Is there a way to add additional required information such at students name, grade, school? So when pre-orders are collected they can be sorted to the correct place. I'm only seeing information on billing and shipping in the cart - which would be the parent.

In the Price List (Photo Products -> Price List) use the " Additional Order Fields / Options" link to do that.
